These Strawberry Mini Donuts are insanely good!
This recipe is gluten free, dairy free, and can easily be made vegan (see directions below). You can also make this recipe work for regular sized donuts rather than mini donuts. The recipe would stay the same but use a large donut baking tin vs a mini donut tin and get 6 full size donuts from the recipe rather than 24 minis.
To make the recipe vegan swap out the egg for a flax egg (1tbsp. ground flax and 3tbsps. water). Make sure to let the flax/water mix sit for a few minutes to allow the flax to absorb the water.
I was recently gifted a mini donut baking tin for my birthday and finally had some time to test it out for my sisters gender reveal party. The mini donuts turned out adorable and were a total hit!
Whenever I bring a dessert or baked treat to family events they all know that its going to be a gluten free and dairy free option and they are always super skeptical on how it will taste. Which means it has to taste just as good (if not better) than the same dessert that uses regular ingredients to make.
It has taken some time to get the hang of baking without the use of dairy or wheat flour but I now get really positive feedback from my family when I bring a baked treat over. Don't get me wrong, they always take the first bite with judgement but I love it when they go "oh these are actually really good" after the first bite lol.
My sister had her ultrasound to find out the sex of her baby on Thursday but had the ultrasound tech keep it a secret. The ultrasound tech put the results into an envelope and my sister gave the results to her good friend. It must have been so hard for her to not peak while driving the envelope to her friends house!
Her friend is super crafty and built a massive balloon dart board for the gender reveal. There were 9 balloons pinned to the board, 8 of them were filled with white paint and 1 was filled with either pink or blue (for the gender).
With the immediate family watching and extended family Face-timing in, my sister and her husband took turns throwing darts at the board trying to pop the balloons. As fate would have it they popped all 8 balloons filled with the white paint before popping the last balloon filled with the gender colour.
The last balloon was pink! They are having a baby girl and we all couldn't be more excited for them. It was certainly a fun way for the family to all find out the gender together.
Ok, back to donuts!
I ended up doing 2 colours of glaze for the party. Half blue and half pink to go with the theme of the gender reveal party. To get the two different colours simply split your glaze into two separate bowls and add pink food colouring to one and blue to the other. I suggest adding a couple drops and then mix to see the colour. Slowly add more until you get the desired shade. To get the colour shown in the photos I added about 4-5 drops. For a darker pink or blue add more food colouring.
These Strawberry Mini Donuts can also be made for a kids birthday party! For a boys birthday party you could even swap out the strawberries for blueberries to better match the blue glaze.
The Strawberry Mini Donuts are very easy to make, preparing the dough and glaze can be done in under 10mins.
First preheat the oven to 400F.
In a small bowl combine the almond milk and apple cider vinegar. Let it sit for 5-10mins. The apple cider vinegar will curdle the almond milk and make a dairy free version of buttermilk.
In a medium bowl combine the dry ingredients gluten free flour, almond flour, coconut sugar, baking powder, and salt.
Next add the egg, vanilla, ACV/almond milk, melted coconut oil and diced strawberries.
Mix well.
In a greased mini donut baking tin use a piping tool to add the dough to the mini donut tin.
Bake the donuts for 12-15mins or until golden brown. If you are using a regular sized donut tin add 10-12mins of baking time.
Once the mini donuts are cooked place them on a cooling rack.
While the mini donuts are cooling add all the ingredients for the glaze in a small bowl and blend well with a hand mixer or stand mixer.
To reduce the amount of sugar in this recipe skip the cream cheese glaze. The donuts are super tasty even without the glaze.
If you are adding food colour to make the dairy free cream cheese glaze pink or blue add it now. I used about 4-5 drops to get this shade of pink.
Top with the glaze once the donuts have fully cooled.
